Ingredients

  • 2 cups cooked rice (preferably cold leftover rice)
  • 2 eggs
  • 1 tablespoon oil (vegetable or sesame)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1/2 cup frozen mixed vegetables (optional)
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Spring onions, chopped (for garnish)

Directions

  1. Heat oil in a pan or wok over medium-high heat.
  2. Add garlic and stir for 10–15 seconds until fragrant.
  3. Crack in the eggs and scramble quickly until just set.
  4. Add cooked rice and break it apart with a spatula.
  5. Stir in soy sauce, vegetables (if using), black pepper, and salt.
  6. Toss everything for 2–3 minutes until hot and well combined.
  7. Garnish with spring onions and serve immediately.
