Ingredients
- 4 salmon fillets (about 150–180g each)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme (or fresh)
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- 4 lemon slices (optional, for topping)
Directions
- Preheat oven to 200°C (400°F). Line a baking tray with foil or parchment.
- Place salmon fillets on the tray, skin-side down.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, parsley, salt, and pepper.
- Spoon the mixture evenly over each salmon fillet.
- Top with lemon slices if desired.
- Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
- Serve warm with rice, salad, or roasted vegetables.
