5-Minute Egg Fried Rice

Ingredients
- 2 cups cooked rice (preferably cold leftover rice)
- 2 eggs
- 1 tablespoon oil (vegetable or sesame)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1/2 cup frozen mixed vegetables (optional)
- 1/4 teaspoon black pepper
- Salt to taste
- Spring onions, chopped (for garnish)
Directions
- Heat oil in a pan or wok over medium-high heat.
- Add garlic and stir for 10–15 seconds until fragrant.
- Crack in the eggs and scramble quickly until just set.
- Add cooked rice and break it apart with a spatula.
- Stir in soy sauce, vegetables (if using), black pepper, and salt.
- Toss everything for 2–3 minutes until hot and well combined.
- Garnish with spring onions and serve immediately.
