Ingredients
- 1 lb (450g) shrimp, peeled and deveined
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 small zucchini, sliced (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Salt to taste
- Lemon wedges, for serving
- Fresh parsley, chopped (for garnish)
Directions
- Pat the shrimp dry and season lightly with salt, pepper, and paprika.
- Heat olive oil in a pan over medium-high heat.
- Add the shrimp and cook 1–2 minutes per side until pink. Remove and set aside.
- Add butter to the same pan. Once melted, add garlic and cook for 20–30 seconds until fragrant.
- Add broccoli, peppers, and zucchini. Stir-fry for 3–4 minutes until slightly tender.
- Return the shrimp to the pan and toss to coat everything in the garlic butter.
- Cook for another 1–2 minutes until well combined and heated through.
- Squeeze fresh lemon on top and garnish with parsley.
- Serve over rice, pasta, or enjoy on its own.
