Ingredients
- 2 tablespoons olive oil or butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz / 800g) crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 teaspoon sugar (to balance acidity)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried basil or oregano
- 1/2 cup heavy cream or coconut milk
- Fresh basil (optional, for garnish)
Directions
- Heat oil or butter in a pot over medium heat.
- Add chopped onion and cook 3–4 minutes until soft.
- Stir in garlic and cook 30 seconds until fragrant.
- Add crushed tomatoes, broth, sugar, salt, pepper, and dried basil.
- Bring to a simmer and cook for 10–12 minutes to blend flavors.
- Reduce heat and stir in the heavy cream.
- Blend with an immersion blender until smooth (optional).
- Taste and adjust seasoning if needed.
- Serve hot with fresh basil or toasted bread.
