One-Pot Creamy Tomato Soup

Ingredients

  • 2 tablespoons olive oil or butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz / 800g) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar (to balance acidity)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried basil or oregano
  • 1/2 cup heavy cream or coconut milk
  • Fresh basil (optional, for garnish)

Directions

  1. Heat oil or butter in a pot over medium heat.
  2. Add chopped onion and cook 3–4 minutes until soft.
  3. Stir in garlic and cook 30 seconds until fragrant.
  4. Add crushed tomatoes, broth, sugar, salt, pepper, and dried basil.
  5. Bring to a simmer and cook for 10–12 minutes to blend flavors.
  6. Reduce heat and stir in the heavy cream.
  7. Blend with an immersion blender until smooth (optional).
  8. Taste and adjust seasoning if needed.
  9. Serve hot with fresh basil or toasted bread.
