Easy Banana Pancakes

Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1/4 cup flour (all-purpose or oat flour)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of cinnamon (optional)
  • Butter or oil for cooking

Directions

  1. Mash the banana in a bowl until smooth.
  2. Add eggs, flour, baking powder, vanilla, and cinnamon. Mix until combined.
  3. Heat a little butter or oil in a non-stick pan over medium heat.
  4. Pour small scoops of batter into the pan.
  5. Cook 1–2 minutes until bubbles form on top.
  6. Flip and cook another 1–2 minutes until golden and cooked through.
  7. Serve warm with maple syrup, fresh fruit, or extra banana slices.
