Easy Lemon Herb Baked Salmon

A light, flavorful baked salmon seasoned with lemon, garlic, and fresh herbs. Ready in

20 minutes, perfect for busy weeknights.

Ingredients

  • 4 salmon fillets (about 150–180g each)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme (or fresh)
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 4 lemon slices (optional, for topping)

Directions

  1. Preheat oven to 200°C (400°F). Line a baking tray with foil or parchment.
  2. Place salmon fillets on the tray, skin-side down.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, parsley, salt, and pepper.
  4. Spoon the mixture evenly over each salmon fillet.
  5. Top with lemon slices if desired.
  6. Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
  7. Serve warm with rice, salad, or roasted vegetables.
