Garlic Butter Shrimp & Veggies

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 small zucchini, sliced (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • Salt to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped (for garnish)

Directions

  1. Pat the shrimp dry and season lightly with salt, pepper, and paprika.
  2. Heat olive oil in a pan over medium-high heat.
  3. Add the shrimp and cook 1–2 minutes per side until pink. Remove and set aside.
  4. Add butter to the same pan. Once melted, add garlic and cook for 20–30 seconds until fragrant.
  5. Add broccoli, peppers, and zucchini. Stir-fry for 3–4 minutes until slightly tender.
  6. Return the shrimp to the pan and toss to coat everything in the garlic butter.
  7. Cook for another 1–2 minutes until well combined and heated through.
  8. Squeeze fresh lemon on top and garnish with parsley.
  9. Serve over rice, pasta, or enjoy on its own.
