Garlic Butter Shrimp & Vegetables is a quick and colourful one-pan meal made with juicy shrimp, fresh vegetables, garlic, and butter. Ready in about 15 minutes, it is perfect for busy days and simple enough for a new cook to prepare with confidence.

Ingredients

  • 450 g (1 lb) large shrimp, peeled and deveined
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 3 cups of your favourite vegetables, cut into bite-sized pieces
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley (optional)

Vegetable options: Choose 2–3 favourites, such as zucchini, bell peppers, asparagus, broccoli, green beans, mushrooms, or sugar snap peas.

Directions

  1. Prepare the shrimp. Pat the shrimp dry with a paper towel and season lightly with salt and black pepper.
  2. Prepare the vegetables. Wash and cut your chosen vegetables into bite-sized pieces.
  3. Cook the vegetables. Heat the olive oil and 1 tablespoon butter in a large pan over medium-high heat. Add your chosen vegetables and cook for about 4–5 minutes, stirring occasionally, until they begin to soften.
  4. Add the garlic. Add the minced garlic and cook for about 30 seconds, stirring so it does not burn.
  5. Cook the shrimp. Add the shrimp, remaining butter, and Italian seasoning. Cook for about 2–3 minutes on each side, or until the shrimp are pink and opaque.
  6. Add the lemon. Drizzle the lemon juice over the shrimp and vegetables and gently toss everything together.
  7. Serve. Sprinkle with fresh parsley, if using, and serve warm.

Serving & Storage

Serve the garlic butter shrimp and vegetables on their own or with steamed rice, cauliflower rice, noodles, or a simple green salad.                                                                                                                                           Store leftovers in an airtight container in the refrigerator for up to 3 days. Allow the food to cool before refrigerating.

Reheating

Pan: Reheat gently in a pan over medium-low heat for a few minutes, stirring occasionally, until heated through.                                                                                                                                                              Microwave: Place in a microwave-safe dish and heat in short intervals until hot.
